Ingredients (2 Servings)
- 1 tablespoon of light soy sauce
- ¼ tablespoon of oil
- ⅔ cups or 250ml of cold milk. It could be whole or semi-skimmed dairy milk. You may use unsweetened almond milk
- 2 cups of vanilla ice cream. You may use non-dairy ice cream
- 100g caster sugar
- 1 tablespoon of flavour boosts. Try strawberry jam, powdered milk, or chocolate syrup. Espresso powder or malted milk powder are also nice choices. You may use only 1 teaspoon of extracts like vanilla flavor
- Toppings, which are optional. They could be cherries, crushed candies, chocolate, and/or whipped cream
- ½ cup of mix-ins: crushed nuts, candies, fruits, and/or cookies
Preparation
- Use clean, wide-mouthed glass bottles. Start by chilling the bottles in a freezer or refrigerator.
- Bring out frozen ice cream to thaw at room temperature, between 10 and 15 minutes.
- Cut the mix-ins into small rough pieces, and lay them aside.
- Lay out a non-stick liner on a clean chopping board. Apply a thin coat of oil on it.
- Melt the sugar in a saucepan. When the heat starts to melt it, swirl it in a gentle manner for an even mix. Remove the saucepan when the sugar turns into liquid golden brown. Let the caramel cool down.
- Stir the soy sauce into the caramel at a gentle pace. It will produce foam. But continue until it thickens and becomes smooth.
- Dip a silicone brush inside the caramel at once. As far as you can, apply the caramel in strips down the inside of the glass bottles. Then leave the strips to set.
- Apply the rest of the caramel on the non-stick liner in strips. The strips will cool down and set after a while. Then break them into small pieces.
- Sprinkle some of the caramel pieces inside the bottom of the glass bottles.
- Place the milk in a blender. Add flavour boost, and the ice cream, in that order. Start at the lowest speed to blend them together. Then switch to medium speed and blend for a minute. Stop at intervals to stir the mixture until smooth.
- Add the mix-ins, and stir them in. Then switch the blender on and off in short starts. Do this between 6 and 8 times. The aim is to mix, but not blend the ingredients.
- Turn out the milkshake into the bottles.
- Add the whipped cream and/or other toppings on the milkshake. Then sprinkle the remaining caramel pieces on it. Put a straw in it and serve.
